Oven Cooked Pork Ribs


I wanted to find out how to cook pork ribs and found this great oven cooked pork ribs recipe which I have changed as I always do. 

I have never baked pork ribs before but found the recipe incredibly easy. This recipe also makes incredibly succulent pork ribs. They just melt in your mouth. You won't be able to stop at one and neither will you want to.


Oven Cooked Pork Ribs with Homemade Barbecue Sauce

Ingredients
1 cup Homemade Barbecue Sauce
1 kg pork ribs

Method
Place pork ribs in a large shallow dish and coat with homemade barbecue sauce. Cover and place in fridge. Let ribs sit overnight in the fridge if possible to really absorb all the flavours.

Preheat oven to 180°C. Line a large baking dish with foil. Transfer ribs to dish and cover. Reserve marinade to coat pork ribs during cooking process.

Bake ribs for 1 hour 30 minutes, basting with reserved marinade turning every 30 minutes.

The last 30 minutes take off foil and bake uncovered. Remove from oven and serve warm.

Baked Eggs in Portobello Mushrooms with Bacon



The minute I saw this on Paleo Spirit I knew I had to try it. It looks like too much fun not too. It also looks too easy which it is.

I am not a fan of prosciutto which the original recipe has so baked some baked which worked a treat.

Baked Eggs in Portobello Mushroom with Bacon

Ingredients
2 organic eggs
2 portobello mushrooms
1 slice of organic bacon cut in half
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
salt and black pepper to taste
a little olive oil

Instructions
Clean the mushrooms, remove the stem and scrape out the gills so you have a well deep enough for the egg.

Rub a little olive oil on the outside of the mushrooms to help them cook and keep them from sticking to the pan.

Arrange the mushrooms and bacon on a baking tray.

Inside each mushroom sprinkle some thyme, parsley, salt and pepper.

Carefully crack the eggs over the mushrooms trying not to spill too much egg yolk. The spilt part is still yummy once it is cooked.

Gently place the baking tray into the pre-heated 180C/375F oven and bake for 10-15 minutes. The amount of time required depends on how thick your mushrooms are and how you like your eggs.

Once out of the oven season with salt and pepper, plate up and enjoy.

Bacon, Spinach and Mushroom Casserole
I found this delicious little meal from Paleo Diet Lifestyle and had to make it immediately. It has all three of my favourite foods - bacon, spinach and mushrooms.

Looking at the photo I thought it wouldn't be enough as a meal. I really love quick and simple meals so decided to add a poached egg as well. It is a divine breakfast but I have it at any time of the day.

Bacon, Spinach & Mushroom Casserole

Ingredients
2 rashes good quality bacon cut into medium sized strips
2 big handfuls of fresh spinach, stems removed
1 egg
150gm button mushrooms sliced
1/2 large onion, chopped
1 garlic clove, minced
1 tbsp ghee
Salt and pepper to taste

Method
Heat a large casserole over a medium heat and cook the bacon, making sure it’s still soft.
Add the onion and cook until soft, about 5 minutes.
Add the garlic and cook for about a minute, until fragrant.
Add the mushrooms and cook for about another 8 minutes, until soft.
Add the spinach and butter, cover and let cook for another 4 minutes, stirring occasionally, until the spinach is well cooked.
Season with salt and pepper and serve.

This makes enough for two with a poached egg on each plate.

Pork Wonton Soup

I found this Pork Wonton Soup recipe in that wonderful Woolworths Fresh magazine.  It is very simple and easy to make and very delicious.

I didn't have any bok choy which the original recipe calls for so used broccoli and mushrooms instead.

The wonton wrappers were purchased from a Korean supermarket which was a few blocks away from where I work so easy to get. I couldn't find them in my local supermarket.

Pork Wonton Soup Recipe

Ingredients
200gm pork mince
5 whole chestnuts finely chopped
1 tbsp Oyster Sauce
2 green shallots finely chopped
1 tsp cornflour
24 gow gee wrappers
4 cups chicken stock
4 cups cold water
¼ cup salt-reduced soy sauce
2 tspns sesame oil
4 large mushrooms chopped
¼ broccoli cut into smaller pieces


Method
1. Combine mince, chestnuts, shallots and oyster sauce in a bowl. Season with salt and pepper.

2. Mix cornflour with 1 tbsp cold water to make a smooth paste. 

 

 3. Place three gow gee wonton wrappers on the bench top. Put a teaspoon of pork mixture into the centre of each wrapper, brush edges with cornflour mixture then bring up corners to form a sack and repeat (as above).

 4. Pour stock and water into a large deep saucepan and bring to the boil over high heat. Add soy sauce, sesame oil and wontons.

5. Cook for 3 then add broccoli and mushrooms and cook for another 3 minutes.

6. Ladle soup into bowls and serve.


Pork Ribs with Smoky Barbecue Sauce

I have always wanted to try pork ribs. When I was in the supermarket the other day I saw a small tray that had my name written all over it so I quickly grabbed it and then started thinking about how I would make them.

I looked for a pork rib sauce and came across this recipe.

Pork Ribs with Smoky Barbecue Sauce 
(serves 2)

Ingredients
1/3 cup barbecue sauce
1/4 cup tomato sauce
1/4 cup apple cider vinegar
2 heaped tablespoons brown sugar
1 garlic clove finely chopped
1/2 teaspoon paprika
500 gm pork ribs

Method
Combine barbecue sauce, tomato sauce, vinegar, sugar, garlic and paprika in a shallow dish. Add ribs and coat them all over. Cover with cling wrap and refrigerate for a few hours or overnight if possible.

Preheat oven to 160°C. Line a baking dish with foil and place just the ribs on it.

Pour a little bit of the sauce over them and reserve the rest.

Cover the dish and bake for 1 hour and 30 minutes basting with reserved marinade and turning every 30 minutes.

Then increase temperature to 200°C remove cover brush with marinade and bake until they have browned about 10 - 15minutes.

I served my pork with oven baked wedges and steamed vegies.
