Slice of Paleo Chocolate Cake

I was looking for a chocolate cake recipe that was grain free, gluten free and lactose free the other day because we were craving chocolate cake at work.

Our computer system was down and we had nothing to do until it got fixed so we started talking cakes - chocolate cakes. Then I went searching for a recipe and found this delicious Paleo Chocolate Cake at Super Glue Mom.

The recipe specifically said the milk had to be full fat milk. I used low fat milk by mistake and it came out moist, light, soft and fluffy. It even had the volume I have been missing since going grain free!

This is not a sweet cake but delicious none the same.  Light on the belly and will keep you happy all day. Definitely a keeper.


Paleo Chocolate Cake

Ingredients
½ cup coconut flour
¼ cup almond flour
2 teaspoons baking powder
½ cup unsweetened cocoa powder
400ml lactose free milk or any non dairy milk
½ cup honey
4 eggs
2 teaspoons vanilla

Method
Preheat oven to 175C/350F then  line a 20cm x 20cm (8x8 inch) square baking tin with baking paper.

Sift coconut flour, almond flour, baking powder, and cocoa powder into a large bowl and mix until combined.

Place milk, honey, eggs, and vanilla in a blender and mix until combined.

Slowly pour wet ingredients into dry and mix until everything is well combined. Do not over mix. The end result is like chocolate soup. Perfect!

Pour the batter into the cake tin and bake for 50 minutes.

Allow to cool before removing from tin. Then serve and enjoy.

We picked a lot of pears in the last few weeks from the tree in our backyard so I went looking for a paleo recipe with pears in it. There are very few.

A lot of the recipes I found had coconut flour and almond meal in them but I don't have much coconut flour left and the store to get it from is too far away so they weren't good.

Then I came across a basic almond meal recipe from Best Recipes which was perfect. I changed it around a little and came up with this easy, incredibly delicious Paleo Almond Meal Pear Muffin Recipe. 

Paleo Almond Meal Pear Muffins Recipe

Makes 4

Ingredients
1 cup almond meal
1 teaspoon baking powder
1/2 teaspoon cinnamon
2 tablespoons almond milk
2 tablespoons coconut oil raw (not melted)
2 tablespoons honey
2 eggs
1/2 cup diced pear

Method

Preheat oven to 180C/350F.

Combine all the ingredients except the pear in a bowl and whisk until well combined.

Mix in the pear until evenly distributed. 

Place four muffin liners in a muffin tin.

Divide mixture evenly amongst the muffins and bake for 20 minutes or until golden brown.


Note: Can freeze up to 3 months.

I made these Peanut Butter and Banana Biscuits because I had some very ripe bananas in the kitchen and didn't want to throw them away.

So I went on a search through the internet for some paleo biscuits with banana and came across this recipe from Inspired Edibles which I adapted into my version of Peanut Butter and Banana Biscuits.

I love peanut butter, I love bananas, I love honey and I love cinnamon which is a great anti-oxidant and add it to any sweet recipe where I can.

This is a such a great recipe. It makes lovely, fluffy chewy biscuits which are super healthy and super good for you. 

They are easy to make and before you know you will have 16 beautiful biscuits sitting on your bench and then gone once you turn your back! Always a good sign.

Peanut Butter and Banana Biscuits


Ingredients
1 cup smooth peanut butter
1 ripe banana
1 egg
3 tbsp honey
1/4 teaspoon cinnamon

Method

Place all ingredients in a food processor and process until combined.

Turn oven on to 160C/325 F.



Line a baking tray with baking paper and place biscuits on the tray with a rounded tablespoon to make them even in size.

Bake for 20 - 25 minutes. I went through three trays which made about 16 biscuits.

Remove biscuits from oven and place on cooling rack, then enjoy

I am starting a new job so needed to make something to snack on during the day. I found these delicious Honey Nut Muffins at Civilized Caveman Cooking but changed around the recipe to suit what I like.

These are super moist and  delicious with a lovely honey aroma. The nuts in these honey nut muffins should fill my belly and stop me snacking until it's meal time.

These are totally gluten free, dairy free, grain/wheat free. Super easy to whip up and even easier to eat.

Now that is my kind of food!


Honey Nut Muffins


Ingredients
3 eggs
3 tbsp honey
2 tbsp coconut oil, melted
3 tbsp rice milk
1/4 tsp vanilla
1/4 tsp cinnamon
1/4 tsp baking powder
1/4 cup coconut flour
1/2 cup chopped mixed nuts

Method
1. Preheat oven to 200C/400 Degrees F

2. Whisk the eggs, honey, coconut oil, rice milk and vanilla together in a medium sized bowl.

3. In a small bowl sift the baking powder, cinnamon and coconut flour.

4. Pour the dry ingredients into the wet ingredients add the nuts and mix until combined.

5. Divide the mixture into 6 muffin tins and bake for 25 minutes.

6. Enjoy

I found this Paleo Chocolate Chip Cookie Dough Truffles recipe while I was searching through paleo websites to see what everyone is up. Taylor Made it Paleo was the website I found it on and couldn't believe my eyes when I did. Go Taylor!

These truffles are wheat free, gluten free, dairy free and sugar free. The only thing that has dairy in it is the chocolate chips and coating.  If you can find dairy free chocolate then you are laughing!

Looking through Taylor's recipe I disagreed on the ingredients and wanted to simplify it so changed around a few items and quantities.

I always halve the recipe because I always end up making more and then regret it as I have gobbled it all up myself.

I much prefer my version of Paleo Chocolate Chip Cookie Dough Truffles. There is a small amount of ingredients and so quick and easy to make.

WARNING! These are out of this world ridiculously good. I gave my sister six of them to share with her husband. He came home to one! You have been warned.


Chocolate Chip Cookie Dough Truffles

Makes 20 bite size truffles


For the truffles:
1/2 cup almond meal
1/2 cup peanut butter (or any nut butter)
1 teaspoon honey
1/2 teaspoon vanilla essence
1/2 cup Chocolate Chips

For the chocolate coating:
3/4 cup Chocolate Chips


Method

1. Combine ingredients for truffles in a bowl until well combined.

2. Roll into bite sized balls then place on a baking tray lined with baking paper.

3. Allow to harden in freezer for about 10-15 minutes.

4. Melt the chocolate for the coating in a bowl in the microwave. Heat for 30 seconds then stir. Heat again in 30 second bursts until melted.

5. Once melted remove truffles from freezer. Dip truffles in chocolate with a fork (use fork as a spoon do not piece truffles. This way the chocolate runs between the prongs) and then place on tray. I find it easier to use a fork it never works for me using a tooth pick or bamboo skewer.

6. Once truffles are covered with chocolate place them back in the freezer for another 10-15 minutes until they harden.

7. Enjoy.

Note: Make sure to store in fridge as they will melt outside. Not that they will last that long.

Paleo Vanilla Pudding

I saw this Paleo Vanilla Pudding recipe and had to make it. I have seen so many recipes ask for cashews to be soaked overnight and had to finally do it. I love the creamy consistency the soaked cashews have. It is such a novel idea.

After I took this photo I tasted the Paleo Vanilla Pudding and decided it was too thick. I put in more water and it then looked more like Vanilla Pudding.

Tastes so good and will make more. This Paleo Vanilla Pudding is a great little snack and quick and easy to make. 


Paleo Vanilla Pudding


Ingredients
1 cup raw cashews, soaked in water overnight
1 tablespoon honey
1/2 teaspoon cinnamon
1/2 cup water

Method
Place all the ingredients into your blender and blend until smooth.

Spoon into a bowl sprinkle cinnamon on top and enjoy. 

Sprinkle cinnamon on top.

Tastes great warm or cold. 

Note: I like my pudding thick but if you want it a bit thinner add more water.

Enjoy!

This is a simple and easy paleo Chocolate Mousse to try. I find I like to add cinnamon when I make anything with chocolate. I like the taste of them together so have done it again here.


Paleo Chocolate Mousse


Ingredients
2 frozen bananas
1 tablespoon cocoa powder
1/2 teaspoon cinnamon
1 tablespoon honey
100ml coconut milk

Topping
Granola

Method
Peel the skins off the bananas wrap in cling wrap and place in freezer overnight.

Take banans out of freezer and slice. It's not easy and be careful as they can go flying around the kitchen!

In a food processor place all ingredients and blend until smooth.

I like my mousse thick. If you like it a bit thinner add extra coconut milk.

I used granola for my topping as I like the crunch that goes with the smoothness of the mousse but you can use any fruit including strawberries, bananas, passionfruit... The choice is yours.

Chocolate Nut Fudge Brownie fresh out of the oven. Oh the aromas!


I wanted a quick and easy dessert to cook and found this Chocolate Nut Fudge Brownie on Health Bent one of my favourite recipe sites. I changed it a bit as I always do. I think it is a lot more fun this way.

For the topping you can add more chocolate and nuts. Go with your heart! Either way it is going to be delicious. You can never go wrong with chocolate and fudge.

This recipe is gluten free, wheat free, grain free and dairy free if you use dairy free chocolate chips. Not always easy to find but when you do stock up!

Choc Nut Fudge Brownie

Fudge Brownie
Ingredients
1 cup almonds made into almond butter or 1/2 cup + 1 tablespoon almond butter
1/4 cup coconut milk
1 egg
1 teaspoon vanilla extract
2 tablespoons cocoa powder
pinch of rock salt

Chocolate Nut Topping
Ingredients
1 tablespoon honey
2 tablespoons choc chips
2 tablespoons chopped walnuts

Method
1. Preheat oven to 180C/350F. Grease and line a loaf tin with baking paper.

2. In a bowl mix together the almond butter, coconut milk, egg, vanilla and salt. Then add the cocoa powder, sugar and choc chips.

3. For the topping sprinkle choc chips and nuts over brownie then drizzle with honey.

4. Bake in oven for 25 - 30 minutes.

5. Serve with lactose free vanilla ice-cream.  TO. DIE. FOR!


Note: It should still be moist in the middle so if you are testing with a toothpick you should get some chocolate on there it shouldn't be dry. If it is you have overcooked it and it's cake not fudge!

I was craving chocolate banana fudge. Don't ask me why I have no idea. I couldn't find a recipe anywhere so made this one up! 

It is a very easy chocolate banana fudge recipe. You will be eating it in no time flat.

I really love the banana flavour and it's real!

Dairy Free Chocolate Banana Fudge Recipe

Ingredients
1/2 cup dark chocolate chopped into pieces
1/4 cup coconut milk
2 tablespoons honey
1 tablespoon coconut oil
1 ripe banana mashed until smooth

Method
Heat coconut milk in a saucepan. When starting to boil add all other ingredients and stir until combined.

Pour into a lined container and place in freezer until set.

Store in fridge and enjoy.

Chocolated Coated Peanut Butter Snail Cookies

These divine little Chocolate coated peanut butter cookies are even more delicious than they look.  Better then that they only have three ingredients in them. 

These easy flourless peanut butter cookies are dairy free, wheat free, gluten free and sooo good to eat.

They are tiny bite size pieces and so easy to eat too many in one go. Fun and delicious. Cooking and eating has never been so good.


Chocolate Coated Peanut Butter Snail Cookies - Dairy Free, Wheat Free, Gluten Free


Chocolate Coated Peanut Butter Snails

Ingredients
1 cup homemade peanut butter
1/4 cup honey
1 egg

Chocolate Coating
100gm dark chocolate

Method
Preheat oven to 180C.

Combine the peanut butter, honey and egg in a medium size bowl.

I used my 1/2 teaspoon to make the small snail shapes. If you would like larger biscuits use your 1 teaspoon.

Bake for 7-8 minutes until golden brown.

Allow to cool on wire rack.

Chocolate Coating
Melt chocolate in a microwave safe bowl and zap for 1 minute. Stir, zap again for 1 minute then dip tops of peanut butter biscuits in chocolate and allow to set.





 

Chocolate Tart

How divine is this gluten free and grain free, Paleo Chocolate Tart! And guess what it is mind blowingly delicious.

To make it vegan just change the honey to maple syrup. It will be equally as delicious.


The flavours in this tart are so wholesome especially the honey and cinnamon. You will never get flavours like this in a store bought tart. You really must make this for yourself then you will never go back. This Chocolate Tart will become a family favourite.


Chocolate Tart

So glossy, smooth, sweet and delicious.

Chocolate Tart

Crust
1 3/4 cups almond meal
1/4 cup coconut oil
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon cinnamon

Filling
300ml coconut milk (1 can)
400gm dark chocolate (I used two blocks of Nestle Plaistowe Dark Chocolate)


To Make Crust:
I grind my own almonds and if you do too take 1 1/2 cups of almonds put them through your food processor then place almond meal into a medium sized bowl, add all other ingredients and mix until well combined.

Grease a 22cm/9 inch tart pan. Then press the almond meal into the bottom of the pan. Prick holes all over base with a fork to prevent it from rising.


Chocolate Tart Almond Meal Crust

Turn oven on to 180C and place pie crust in oven. I placed the tart pan on a baking tray. Makes it easier to move around.

Baking with almond meal can be tricky as it does burn quickly. The crust on this tart burns very quickly.  

Here is the secret to getting the perfect crust:  Place foil around the edges of the crust then place in the middle of the oven for 15-20 minutes or until crust is lightly browned and cooked through. Keep an eye on it at all times!

Set aside and allow to cool completely.

To Make Filling
Break up chocolate and place in a medium sized bowl. Heat coconut milk in a small saucepan until just boiling and pour over chocolate. Stir until all chocolate is melted. Then pour chocolate mixture into pie crust.

Place chocolate tart in fridge until set.

You can decorate your tart with anything you like including chocolate curls, different types of nuts, cocoa powder, strawberries..... I was in a hurry, as I made this for a farewell dinner for a friend, and didn't have time but would have scraped a few chocolate curls from the rest of the chocolate block I had left over.

Cinnamon Coconut Flour Paleo Pancakes

The recipe for these light and fluffy coconut flour pancakes came from Paleo Spirit. I changed it a bit as I always do to suit what I have at home at the time.

They are really light on the tummy and moist and delicious

Not much more to say than enjoy!


Fluffy Cinnamon Coconut Flour Paleo Pancakes

Cinnamon Coconut Flour Pancakes

Makes 6 small - medium sized pancakes

Ingredients
2 eggs
1/2 cup rice milk or any nut milk
1 teaspoon vanilla extract
1/4 teaspoon liquid stevia or to taste
1/4 cup coconut flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
 pinch of salt


Method
Beat eggs with a mixer until frothy. Mix in milk, vanilla, and stevia.

In another bowl combine coconut flour, baking soda, salt and cinnamon.

Combine dry mixture with wet and beat until well combined.
 
Preheat fry pan and spray with olive oil then pour in batter to create pancakes.

Cook for approximately 2-3 minutes each side.

Serve hot with pure maple syrup or topping of choice.

Multiply Delicious Paleo Banana Chocolate Chip Cakies


This divine Banana Chocolate Chip “Cakies” recipe comes courtesy of the sublime Multiply Delicious blog. I have changed the recipe a little but these little morsels are absolutely delicious.

They are soft, juicy, light and fluffy. I will definitely be making them again.

Note: Make sure to line two trays. One tray will bake and the other tray will cool. So when the cakies are done take them out of the oven so they can cool and then place the other tray in the oven. These bites are very soft to touch so if you take them off the tray straight away they will crumble.

They come out to a AUS50 cent size. So not very big but you an make them bigger if you choose.

Banana Chocolate Chip “Cakies”

Makes 15
 
Ingredients
1/2 cup mashed ripe banana
1 tablespoons creamy almond butter
1 teaspoons vanilla extract
1/2 teaspoon baking soda
½ teaspoon ground cinnamon
Pinch of Salt
1/2 cup plus 2 tablespoons almond meal
2 tablespoons dark chocolate chips

Method
Preheat oven to 180C/350F degrees. Line two baking trays with baking paper.

With a hand mixer, blend together the banana, almond butter, vanilla extract, baking soda, cinnamon, and salt. Add in almond meal and chocolate chips and stir to combine.

Using a  tablespoon and scoop even scoops and place on prepared baking sheet.

Bake for 11-14 minutes or until cookies are slightly golden on top. Remove from oven and allow to cool slightly before removing from pan.

Again, these are soft so if you remove too soon you’ll have a soft cookie crumb mess.

Flourless Tahini Cookie Recipe - Dairy Free, Wheat Free, Gluten Free


I had two jars of tahini in my fridge and wanted to find some tahini recipes to use some of it up. So I searched for tahini recipes on the internet and came across these delicious Flourless Tahini Cookies.

The original tahini recipe for the cookies is here but they are made with chocolate. I have been eating a lot of chocolate lately so wanted to try something different.

I had heaps of nuts in my cupboard so used my favourite which are pecans. Yum I love pecans. Since I had some choc bits I decided to top each one with some chocolate. It's only a small amount. As you can see they turned out looking like boobs! Hahahaha, oh well.

They are soft and chewy and incredibly delicious.  I will definitely make them again but I think next time much smaller and less erotic looking!

Flourless Tahini Cookies Recipe

Ingredients
1 cup all natural tahini
1/2 cup of honey
1 egg
1 tbsp of cinnamon
1 tsp of organic vanilla essence
2 tbsp chopped pecans
Choc chips to top each biscuit

Method
Preheat oven to 180C/350F and line a biscuit tray with baking paper.

Combine all ingredients in a bowl and mix until you have a thick and creamy batter.

Place a small scoop of batter per cookie on the tray. Then place a choc bit in the centre of each.

Note these do spread so leave enough space between each, or just make smaller cookies. 

Bake for 9-10 minutes, be sure to check the cookies every few minutes as they do cook quickly!

This Paleo Almond Bread recipe produces a lovely, light Almond Bread with beautiful aromas. It smells like it has ten different spices in it.

It was original called the Paleo Breakfast Bread which I got from Elana's Kitchen of whom I adore. I love all her recipes. I think Almond Bread is a nicer title and you can eat it whenever you choose.

Almond Bread

1/2 cup creamy almond butter
2 eggs
1 teaspoon vanilla
2 teaspoons maple syrup or honey
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda

In a large bowl, with a hand blender, mix almond butter until creamy

Mix in eggs, honey, vanilla and stevia

Add salt, baking soda and cinnamon

Mix well with hand blender until all ingredients are combined

Transfer batter into a well greased 20 x 20cm/8 x 8 inch baking dish (or within these dimensions. I think my pan was 23 x 16cm.)

Bake at 170C/325° for 12 to 15 minutes.

Serve

Paleo Chocolate Peanut Butter Fudge


I stumbled across this Paelo Chocolate Peanut butter Fudge recipe while I was searching Paleo recipes. I am trying to clean up my diet and it doesn't help that I have a massive sweet tooth.

This fudge is incredibly smooth and creamy but still a bit bitter. It's not super sweet. You must store this is the fridge because it will melt. It's delicious when it melts in your fingers. I love licking melted chocolate from my fingers.

I can't find where I got this Paleo Chocolate Peanut butter Fudge recipe. Originally it was a sesame butter fudge but since I had peanut butter on hand just used that instead.

Paleo Chocolate Peanut Butter Fudge Recipe

Ingredients
100 gms dark chocolate broken into pieces
1/2 cup coconut milk
1/4 cup peanut butter
3 Tbsp Maple syrup
1/4 teaspoon liquid stevia

Method
In a microwave safe bowl, add all the ingredients.

Microwave for 30 seconds, then remove and stir.

Microwave again for 30 seconds, then stir. Repeat this process until the mixture is smooth. It only takes about 1-2 minutes total.

When it’s smooth, pour into a slender loaf tin.

Place in the freezer to firm up, about 1-2 hours.

After its solidified, cut into squares and transfer to fridge.
